Roast Butternut Squash, Red Onion & Blue Cheese Tart

Tom uses chunky butternut squash, caramelised red onion and local blue cheese in this tart to wonderful effect, the colours are rich and vibrant and whether served hot as a main course or cold with salad it always looks rustic, home made and delicious. We use the same delicious pastry for the tarts as we do for the pies; all our pastry is hand made from scratch by our pastry chef Simon, a true labour of love! We were delighted to win Taste of the west awards for this tart, most recently Gold 2009.
